110gr di farina 00

80gr di fecola di patate

20gr di burro

1 bustina di lievito

150gr di ricotta vaccina

Ingredienti per 4-6 persone: 1 pezzetto di 2,5 cm circa di radice di zenzero fresca, pelata e tritata/ un cucchiaino di aglio in polvere/ 3 cucchiai di olio di sesamo/ 1 bastoncino di cannella di 2,5 cm circa/ 3 chiodi di garofano/ 3 capsule di cardamomo schiacciate/ 1 pizzico di semi di anice/ 2 cipolle pelate e tritate/ 1 mazzetto di prezzemolo tritato/ un pizzico di curcuma macinata/ 1/2 cucchiaino di peperoncino in polvere/ 2 cucchiaini di passata di pomodoro/ 500 gr. di agnello disossato a cubetti/ 1 pizzico di pepe nero macinato.

Con il pestello e il mortaio, battete lo zenzero e l'aglio, fino ad ottenere un composto fine, quindi mettere da parte. Scaldate l'olio in una casseruola, aggiungete il bastoncino di cannella, i chiodi di garofano, il cardamomo, i semi di anice e le cipolle, saltate il tutto per 5 minuti, o finchè le cipolle non saranno passite (se necessario aggiungete un po' di acqua calda). Aggiungete la salsa di aglio e zenzero, il prezzemolo tritato, la curcuma, il peperoncino in polvere e la passata di pomodoro. Amalgamate bene e cuocete a fiamma bassa per 5 minuti, mescolando di tanto in tanto. Incorporate l'agnello, condite con pepper and pour 150 ml. of water. Ingredienti per la "pasta matta": 125 gr di farina/ 1 cucchiaio di olio di semi di girasole (io ho usato dell'olio di sesamo) / 1 small egg (50 gr) / 1 pinch of salt / 5-6 -

Ingredienti: 1 mazzetto di menta fresca/2 cucchiai da minestra di tè gunpowder in foglia/ 8/10 cucchiai da minestra di zucchero

Vi serviranno inoltre una teiera metallica , un bicchiere di vetro e un cucchiaio o bastoncino di legno.
