Ingredients for a pan 30/32 cm 
  3 large eggplants 
  cubes of stale bread (made from 3 slices of bread to spare hardened) 
  salt, pepper, a teaspoon of oil 
  about 500 ml white sauce "light" (made by bringing to boil 250 ml water with a tablespoon of margarine, and adding 250 ml of milk scecherato with 1 tablespoon of starch, making it thicken over medium heat but not too much, we need enough fluid!) 
 -  Slice the eggplant is not very subtle in disponiamole suitable to microwave a bowl and cover with foil, let cook 10 minutes at 700 w.
-  spenneliamo oil on the crisp plate
-  we form a layer of eggplant, salt and pepper
-  we drop one third of our cubes
-  cover with the sauce
-  repeat in layers until you run out of ingredients
-  If we like the crispy crust we sprinkle the surface with breadcrumbs.
-  Cover with a special bell and cook for 13 minutes at 700/800 w
-  take away the bell, put the pot on the grill / backsplash and pass under the grill for 8 minutes.
