Finish Nailer With Portable Tank

La mia sacher


Perhaps I have already said, or maybe not, but the Sacher cake with the puff pastry is absolutely my favorite cake, so I could not choose to celebrate the specialization with friends.

The recipe is a mixture of recipes collected here and there over the years that I mixed, tweaked and revised up to a Sacher similar (but alas not identical) to what I ate in Austria.


this is my Sacher:


6 eggs 175 g dark chocolate

150gr sugar 130gr


flour 1 pinch of salt

tip a teaspoon of baking powder 350g of

apricot jam to glaze

100ml cream

100g of dark chocolate


Preheat oven to 150 ° C

Grease a cake pan and cover it with a disc of baking paper (I used to be a 24cm)

Melt the chocolate in water bath or microwave.

Cream the butter with half the sugar until light and fluffy and creamy. Add the egg yolks one at a time continuing to mount (in total I put the mixture of x + 10 minutes). Add slowly the melted chocolate, stirring constantly, add the flour setacciatacon the pinch of yeast. Whip the egg whites with a pinch of salt until stiff, add the remaining sugar and continue beating for 2-3 minutes latria. Very gently mix little by little the two compounds. Pour the mixture into the pan and bake for about 1 Oretta (possibly do the toothpick test).

the cake from the oven, let it cool in pan for 5 minutes then remove and cool on a wire rack.

once cold chill for at least 2-3 hours (can be prepared the day before and freeze it even better).


When stuffing, warm the jam jar in a water bath, and with great patience pass the jam through a sieve, discarding the remaining pieces of fruit.

Cut the Cake ben fredda in due o 3 dischi (a seconda di quanto vi è venuta alta) e spalmare gli strati con la marmellata (sarà liquidissima, quindi splamando non sbriciolerete nulla) tiepida di albicocche. Ricomporre gli strati uno sull'altro. Stendere un velo sottilissimo di marmellata anche sulla superficie della torta.


Intano preparare la glassa al cioccolato facendo sciogliere nel microonde il cioccolato fondente, unirvi la panna mescolando bene e colare il tutto dall'alto sulla torta lasciando che la glassa si diffonda su tutta la superficie scivolando da se'. Coprire bene i bordi e lasciar raffreddare il tutto.

Una volta raffreddata la glassa, decorare a piacere.
