Torta Ambrogio

Febbraio a casa mia è tempo di torte, la sacher per mia sorella, due torte al caffè per il mio papà e oggi la torta per mio marito.




Chi non ricorda la signora vestita di giallo con il grande cappellone che diceva al suo Ambrogio "non è proprio fame, è piùùùùùùùùùùùù....)

Non è quindi una semplice torta al cioccolato è piùùùù....

La base è una nuvola al cioccolato (ricetta infallibile della mia amica Cri)

220gr frumina
5 uova
un bicchiere di olio
30gr cacao
1 bustina di lievito per dolci
250 gr zucchero

Montare a lungo le uova con lo zucchero fino ad avere un composto chiaro e spumoso, continuando a montare aggiungere il lievito, la frumina, il cacao e l'olio. Imburrare e infarinare uno stampo da 26cm. Cuocere la nuvola per circa 45-50min a 150°C in forno ventilato già caldo
Spegnere il forno e aspettare 5-10 minuti prima di sfornare

Far raffreddare la torta e sformarla.

Io l'ho tagliata in 3 dischi



Farcia all'Ambrogio
400gr di crema di nocciole e cioccolato
200gr. di panna
8 wafer alla nocciola
90gr.di granella di nocciole
50gr di latte condensato.

In a bowl, sift flour with baking powder. Melt the butter in a double boiler (I microwave) separate the yolks from the whites and place the egg yolks with sugar and egg whites until stiff. Add egg yolks to the flour, warm milk with melted butter, lemon juice and zest. Finally add the egg whites with a pinch of salt. Pour into a baking pan and bake at 130 degrees in preheated oven for 35-40 minutes (the recipe reported 30 minutes but it seemed to me a little).
